Is my cake ok to set out at room temp? Do I need to refrigerate it?
Any cake that has buttercream does have a dairy element and will need to be kept in a cooler temp that ensures food safety. You will want to allow your cake to warm up a bit before serving. It is best to pull a single tier cake 1-2 hours prior to service. For a 2+ tiered cake, 3-4 hours prior to service. Seasonality and room temp, also plays a huge role in how to keep your cake. In the heat of the summer, you'll want to pull your cake 1-2 hours prior to serving it, no matter the size. For outdoor events, please do not put the cake in direct sunlight. Think of this as a big block of butter and protect it from any potential melting situations.
